Chocolate Pancake Cake Recipe

Bored of regular pancakes? Serve up a slice of this and everyone will think it's 'flipping' fantastic!

Are you looking for something a little different to make this pancake day? Are you bored of your usual lemon & sugar topping? This pancake cake is sure to make everyone's mouth water with it's chocolate cheesecake filling and creamy milk chocolate sauce. Serve up a slice of this and everyone will think it's 'flipping' fantastic!

You will need:

For the pancakes
200g self raising flour
250ml whole or semi skimmed milk
2 large eggs
cooking spray for frying

For the filling
150g Full fat cream cheese
150g Chocolate Hazelnut spread (Nutella)

For the chocolate sauce
150g milk chocolate chips
125ml whole milk

Sprinkles for decoration

Don't use low fat cream cheese or your filling will be too runny!

Step 1

In a large bowl, whisk together the flour, milk and eggs until smooth.

Step 2

Heat a non stick frying pan over a medium heat and spray with a couple of shots of oil.

Step 3

Spoon batter into the pan and allow to spread. Cook for 2-3 minutes, until lightly browned, before flipping over and repeating on the other side. Repeat with the remaining batter until it's all been used up, and set aside.

If you use a ladle to spoon your batter you can be sure that your pancakes are all going to be evenly sized.

Step 4

Beat the cream cheese and chocolate spread together until smooth. Set aside until needed.

Step 5

Add the chocolate chips to a bowl. Heat the milk in a pan or in the microwave until boiling. Pour the milk over the chocolate chips and whisk until smooth. Refrigerate until cool and thickened.

Step 6

Lay one pancake in the centre of a serving plate and spread a spoonful of the chocolate filling on the top. Lay another pancake on the top and repeat with the chocolate filling and pancakes until they've all been stacked (finishing with a pancake without filling on top). Place in the fridge for an hour or so before serving to firm up the filling and make it easier to slice.

Step 7

Before serving, pour some of the sauce over the pancake cake and top with sprinkles. Reserve some of the sauce for serving.
