This spring we at Wayfair are having a superfood surge to encourage our readers to get growing your own superfoods and to also get cooking with them! If you haven't seen it yet, check out our Grow Your Own Superfoods guide which has a whole bunch of information to help you make the most of your garden and windowsill space.

Once you've grown all your superfoods, it's time to get cooking with them. We've been scouring the blogosphere to find the cream of the crop when it comes to superfood chefs and have put together a collection of mouth-wateringly delicious recipes that contain those all-important superfoods. With all the meals of the day covered with these brilliant and sometimes intriguing recipes, why not challenge yourself to see how many superfoods you can eat in a day?

Breakfast

Breakfast, as we all know, is the most important meal of the day. A healthy breakfast with foods that are going to give you lots of energy to get on with your day is a good way to start the day. Add a sprinkling of your favourite superfoods, and you'll have a super-duper start to your day!

Orange, Lime and Apricot Overnight Oats

The first of our super breakfast recipes is this tasty, citrusy oats creation from Harriet. Oats are known for being high in fibre which means they give you lots of energy. Paired with sweet and tangy oranges and limes this recipe will add a little zing to your day. Not to mention the apricots which are packed full of goodness!

Prepared the night before, this recipe is especially handy if you have a brisk start to the day. Just soak the oats in milk, orange zest and juice and lime juice over night and then in the morning this nutritional and homely dish is ready to eat.

Spiced Breakfast Quinoa Porridge

This recipe provides an interesting twist on an old favourite: porridge. Instead of oats, vegan blogger Natalie uses quinoa. Quinoa is a lesser known superfood that is originally grown in South America. It is a great grain that is very healthy for your heart and is extremely versatile.

This creamy quinoa porridge (made with milk and rich coconut cream) is teamed with gorgeous spices and fresh fruits that will give you a super start to the day. You can mix it up with your own favourite spices and additions (and maybe even put a few more superfoods on top!).

Green Breakfast Smoothie

This smoothie recipe from Mel is full of goodness and it's a little different to your bog standard smoothie. All you have to do is blend together a banana, half an avocado, some spinach, almond milk and cashew butter and you have a green smoothie that's rich in a variety of nutrients.

You can see from the gorgeous colour of this smoothie that it'll do wonders for your body and mind. If you're after a refreshing, slightly sweet and nutty breakfast, this combination of local and exotic superfoods is just right for you. If only it was easy to grow avocados in the UK!

Lunch

Whether at home, work, school or out and about, lunch is another opportunity to pack in some delicious superfoods. These recipes are all meals that are great for filling you up during the day and keeping you energised, whatever you're up to!

Beet Burgers

This gorgeous recipe from Sassy makes for a lunchtime or evening meal that is full to the brim with superfood goodness. This recipe uses some clever tricks to give you a gluten free burger that is just as (if not more) delicious as the real thing!

These burgers are made from a mixture of cooked quinoa, kidney beans, grated beetroot, fresh herbs, sultanas, lemon juice and a little gluten free flour to bind all the ingredients together. Pat into rounds and bake in the oven alongside portobello mushroom 'rolls' that make convincing bread rolls. Then you can craft your burger the way you like it with lettuce, tomatoes, cucumber or any other delectable additions.

Roasted Garlic and Squash Soup with Thyme Pesto

As food enthusiast Rebecca suggests, this earthy and heart-warming soup is full of scrumptious superfoods that will revive you after a busy morning or warm you up after a long walk in the countryside. All you have to do is roast a squash of your choice with a bulb of garlic and then blend thyme, pine nuts and walnut oil together to make a pesto that will add a pop of flavour to the dish.

Garlic is one of our favourite superfoods as it provides so much flavour and you can use it in almost any dish.​ This soup champions the humble garlic bulb and we like it a lot!

Roast Sweet Potato and Feta Salad

If you're looking for a light lunch that's going to set your taste buds tingling, then this beautiful and luxurious salad from Julie does just the trick. Sweet potato is a simply delectable vegetable to cook with and this salad is no exception.

Drizzle some oil on the sweet potato and sprinkle a little cinnamon on top to add a warm spice. Paired with sweet cranberries and salty feta cheese this salad is rich and colourful, so you know it's going to be good for you. All that's left to do is to drizzle a drop of dressing over the salad (to your own taste) and make lunch time a real treat.

Snack

Snacking needn't be sinful—in fact, you can easily get a few more superfoods into your day with these snacks. These yummy recipes make perfect snacks or light meals for when you're on the go and need a little lift between meals.

Apricot, Coconut and Hemp Protein Bars

Bread lover and food blogger Kate has created this exciting recipe for a snack bar that's high in protein and packed with some of our favourite superfoods (not to mention it's delicious and healthy!). This bar, which can also be used as the base for a cheesecake, can be made in a big batch and kept as a handy little lunch box addition or as a snack when you're on the move.

With apricots and pumpkin seeds in this recipe plus other rich flavours like coconut, hemp, vanilla, and cinnamon, these bars will give your day a super boost.

Roasted Red Pepper, Cauliflower and Walnut Buckwheat Salad

This delightfully colourful salad by vegan foodie Emma makes a great lunchtime meal or a snack if you're feeling peckish during the day. With lots of interesting ingredients and a mix of superfoods, this salad is no ordinary salad.

The buckwheat, roasted cauliflower, roast peppers, lemon juice, parsley and walnuts provide an array of textures and flavours to satisfy your taste buds. We particularly like the idea of roasting the cauliflower, as this'll give this otherwise quite plain superfood, a bit more flavour and warmth.​

Gravad-Beetroot with Blood Orange, Purple Dulse and Cacao

If you're looking to taste the rainbow, this is the dish for you. Eco-chef Tom has crafted this stunning salad that combines all the colours of the rainbow by using richly coloured superfoods.

This recipe is a vegetarian take on gravlax which is usually made with salmon. All you need for this is some good quality beetroot (to be pickled in gin!), a blood orange, dyll and some cocoa beans. You can pickle the beetroot at a time that suits you and then simply throw together this beautiful salad whenever you're feeling peckish.​

Dinner

A hearty dinner is a great British tradition and you can easily cook up your family's favourites with a superfood twist! These delicious recipes all incorporate superfoods to provide you with a meal that is tasty, healthy and will give you and your family that warm, satisfied feeling.

Spring Roast of Scotch Beef with a Wild Garlic Pesto Crust

This recipe from Scottish blogger Claire offers a twist to your Sunday roast, and the pesto can be used to your heart's content in many other dishes too! The pesto here is made with wild garlic that can be found in many wooded areas (read Claire's advice on foraging) or grown at home easily.

Chopped wild garlic leaves, grated parmesan cheese, and toasted pine nuts are blended together to create this wholesome green pesto. The pesto crispens in the oven, giving a lovely crust to this roast beef.

Pumpkin and Goats' Cheese Mashed Potato

Sausages and mash has got to be one of Britain's most popular dinner time dishes. Expert blogger and chef Sarah has taken this classic dish and mixed things up a little to make the ultimate superfood mash.

This pumpkin and goats' cheese mashed potato is pretty self-explanatory. Just boil some potatoes, put together some pumpkin puree and mix together with creamy goats cheese to create an exciting version of mash that has a rich flavour and texture to it. If goats' cheese isn't your thing you could try it with other types of yummy, creamy cheese.

Lime and Chilli Salmon

This Thai-inspired recipe from blogger Craig is a healthy dish that's easy to make and even easier to gobble up. Marinated in chilli, ginger, coriander and lime, the salmon oozes spice and zest. Wrap the salmon loosely in tin foil and bake in the oven, letting the flavours melt into one another. You can then pair the salmon with whatever takes your fancy—Craig's gone for plain rice and mange tout.

The superfoods in this recipe are abundant; salmon is an excellent source of high-quality protein. Mixed with chilli and ginger, two of our favourite superfoods, this dish is superfood heaven!

Pudding

It's pudding time and you might think that you're all superfooded-out for the day but we've got some yummy treats for you that have a great big dollop of superfood goodness in them. These recipes are all simple to make and provide a little superfood sweetness.

Warm Baked Peaches with Basil and Honey

This dessert recipe from Rachel will add a certain sweetness to your life. We love this recipe because it features one of our favourite superfoods in a way that you might not expect.

First cook the peaches in a pan with a good bit of melted butter until they're golden brown. Then add a little orange juice and honey to create a sweet syrup. Now for the twist—sprinkle over some basil (yes, you heard right), add a scoop of ice cream and enjoy. Basil is a herb that is really easy to grow at home, so you can have basil on tap for making exciting dishes like this one.

Chocolate and Goji Berry Energy Balls

These chocolate treats from Mena will satisfy any sweet tooth after a meal or they make a tasty snack during a busy day. The surprise in these is that they contain one of our favourite and most exoctic superfoods... the goji berry!

These energy balls are filled with rich goodness. All you have to do is mix cacao, coconut oil, chopped dates, honey, goji berries and cashew nuts together. Roll together in a ball and then roll over coconut. Then you'll have a delicious chocolate indulgence that's actually highly nutritious and will give you nutrients to boost your brain, heart and skin.

Kale and Blood Orange Cake
Last but not least, the final recipe in our Superfood Cookbook is this kale and blood orange cake, concocted masterfully by Kate. Kale? In a cake? This cake is actually incredibly fluffy, tasty and green!
The flavour of the kale is very light and creates that lovey green colour. The real flavour comes from the zesty blood orange in the sponge and the pale pink citrus buttercream. The recipe is also available in a vegan version that's equally delectable. Who knew that you could get a superfood boost from cake? It shows you can have your cake and eat it.
