These are the soulful soups I rely on to cheer me up, many also make use of this month’s seasonal vegetables. Last month it was all about smoothies, but as we move through February, I am realising the warmth and comfort of soup is what I need to keep my healthy ambitions on track.
I’ve been heavily reliant on the slow cooker and hob for soups, but we were given a soup maker as a gift and I am learning to embrace it the speed of the soup maker, especially at lunchtimes and for quick tea – throw it all in and 20 minutes later soup is ready! I have one to giveaway today too, and you can also use it as a blender for smoothies, double win.
These are my favourite soup recipes
Sausage and butter bean stew comforting, great use of leftovers and can be veggie too.
Miso Soup just the thing when you need to quickly get some healthy stuff in your system.
Tomato and Lentil Soup and Dumplings nothing is more like being at home than this.
Cauliflower Cheese Soup an amazingly soulful recipe from the chef at Eden Hall Spa, and perfectly seasonal too!
French Onion Soup (veggie version) Simple pleasures are the best. Onion is another cheap and plentiful veg that is always seasonal.
More soups to try
I have been looking round for more recipes and I spotted Cass from Frugal Family shared this super (pun intended) recipe for Spicy Butternut Squash and Sweet Potato Soup, great use of seasonal veg.
I have made and loved Ali from Over a Cuppa’s Garlic Mushroom Soup, as a veggie I often get mushroom cravings, and this was exactly what I needed! One of many lovely soup recipes Ali has.
Check out Emily’s soups at A Mummy Too. I fancy Creamy Carrot and Swede Soup with toasted almonds, swedes won’t be seasonal for much longer, so enjoy while you can!
Helen linked a Fennel and Bean soup up with Happy and Home on Monday, I love the sound of it!
