Homemade Doughnut Recipe

Who doesn't like doughnuts?! I think they're that "guilty pleasure" of almost each and every person. Cheese doughnuts are very popular in Poland. They're very easy to make and take considerably less amount of time to prepare than traditional yeast dough doughnuts. You can eat them plain, sprinkled with icing sugar, make a proper icing or just dip them in melted chocolate! They will last in a good condition up to 3 days, but are the best eaten on the day of making.

Ingredients:
- 250 g plain flour
- 250 g plain cream cheese
- 1 whole egg
- 2 heaped tablespoons caster sugar
- 1 tablespoon softened butter
- ½ teaspoon baking sodaoil for frying
Equipment:
- 1 big bowl
- silicone spatula
- rolling pin
- round cookie cutter and metal bottle cap
- deep pan for frying
Step One:
Put all the ingredients into a big bowl. Using a silicone spatula/big spoon combine them loosely together.
Step Two:
Using your clean hands, bring all ingredients together to form a ball. Do not knead or over handle the dough at this stage.

Step Three:
Lightly flour your work surface. Tip the dough out of the bowl and roll out until it's about 1 in thick. Using a cookie cutter cut circles, then using a metal bottle cap, cut holes in your doughnuts. Repeat until you've used up all the dough.
Step Four:
Heat up about 2 cm deep of oil to 160 C – 170 C (any lower and the doughnuts will soak the oil, any hotter and your doughnuts will burn). Place your doughnuts in the oil and fry on both sides until well risen and lightly browned (about 2 minutes on each side). Take out of the pan and place on a kitchen towel. Cool completely before eating.

Finishing Touches:
To make traditional Polish type of icing for doughnuts, take a tablespoon of icing sugar and add little bit of warm water or lemon juice - just to make paste consistency of double cream. Mix it well making sure there are no lumps. Spread over your doughnuts and leave for a while, letting the icing set. You can also play a little and add some food colouring to the icing!
