This is my first Asian style knife, and not my last. Love the hollow edge which prevents food from sticking. The angle on this knife is more acute than a traditional chef knife which makes it a lot sharper. The half bolster makes sharpening and honing a breeze, and also allows for a larger cutting surface. It is dishwasher safe which is a definite bonus, and the German steel is stain resistant and extremely durable.
