This cold smoke adaptor is designed to enhance the low-temperature performance of the models that are sold complete with cabinets. That is all versions of both the original. A design feature of this cold smoke adaptor is the ability to completely remove the smoke generator apparatus from the smoking food cabinet. In this way, the heat from the bisquette heater, the source of the smoke, dissipates outside of the insulated cabinet which experiences, therefore, no significant rise in temperature. The cold smoke adaptor simply provides a neat solution for transferring the smoke when the smoke generator and cabinet are separated in this way. The cabinet is positioned a couple of feet above the adaptor and is connected to it by means of the flexible metal hose. Full instructions are included.

To produce these bisquettes, the hardwood chippings are bound together using precise quantities, at controlled pressures and densities. The variety of wood being burned determined the flavor of the smoke. This bisquettes burns a flavour bisquette once every 20 minutes, producing a clean smoke flavour. As each is burnt, it is gently pushed from the burner element by the next bisquette, to be extinguished in the pot of water. The cycle continues for as long as the smoker is loaded with briquettes. When wood burns, the smoke flavor is produced in the initial minutes of the burn. Once the wood generates enough heat to keep burning on its own, it yields high temperatures, acids, resins, and gases. These will distort the flavor and the appearance of smoked food. When wood burns to this stage, there is no control over the cooking conditions. Not only do these bisquettes eliminate unwanted heat, but the smoke also produced way is four times cleaner than smoke produced by identical loose chips burned in a frying pan or burn box.

This smoke generator is a highly adaptable unit that allows you to retrofit almost any small structure into a smokehouse. The unit consists of two parts. This smoke generator is fabricated from stainless steel and fulfils the same purpose smoke generator which is fitted to the original advancing the bisquettes onto the heating element at a rate of one every twenty minutes. This smoke generator has a consequence as the controls are limited to a power on/off switch, and a bisquette advance button used to position the first bisquette on the burner. Thereafter, bisquettes feed automatically. The second part of the apparatus consists of a stainless steel face-plate, with an adjustable collar onto which the smoke generator fits by means of two lugs. This allows the smoke generator to be easily removed from the faceplate in order to facilitate cleaning and storage. The intention is that the faceplate remains permanently attached to the structure that you use for smoking.

Excellent service from Wayfair, delivered the next day from order in which I was very surprised. The product itself is great! Used once so far and very pleased!!
