This is a great alternative for those who have an aversion to the taste of the paper filters from drip brewers or for people who dislike the sediment in the bottom of the cup from the French press method. The Syphon/Vacuum Pot was fashionable from around the first world war through the 1950s, also known as a coffee syphon it has two glass globes with one sitting on top of the other with a filter between them and the entire set up is suspended over a spirit lamp. Water in the lower globe is forced through heat into the upper globe where the ground coffee is contained. Heat removal after brewing will create a vacuum, thereby drawing coffee back into the lower globe. What makes the vacuum pot method of brewing unique is, among others, its extraction. The right extraction of coffee solids, the soluble solids which are needed to give the coffee its flavour and body, will yield the ideal coffee. The extraction rate depends on how hot the water is, how long the ground coffee remains in contact with the water, and how fine or coarse the grind is. Coffee connoisseurs consider the vacuum pot method far superior to drip coffee due to the fact that in the drip method hot water is simply poured over ground coffee in a filter, thereby under-extracting the coffee solids. The vacuum pot is noted for its brew because as the coffee is brewed in the upper globe, the water temperature is found to be in the range of 198 to 200 degrees, well within the ideal temperature of 196 to 205 degrees f. This range reveals the full spectrum of aromas and flavours in the ground coffee, thereby giving a denser-textured, fuller-flavoured cup than one otherwise probably used to.

This is a wonderful machine, not only does it make superbly brewed coffee it is also a journey into science and a visual spectacle. The design of this coffee maker dates back to the 1830s. The machine works using gravity and vacuum principles: first, you place ground coffee in the heavy glass brew chamber. Next, you fill the boiler chamber with hot water and place it on the apparatus. A tube connects the two chambers. When full of water the boiler sits low on the swing frame and holds the lid open on the alcohol wick burner. When the water boils it is forced into the brewing chamber, at this point the boiler rises and the lid of the burner closes extinguishing the flame. A vacuum is created in the boiler and the brewed coffee from the brewing chamber is now miraculously drawn back into the boiler from where it can be served from the little tap… The tube that connects the chamber has a very fine washable mesh filter that never needs replacing. The entire process is quite a visual spectacle and the coffee can easily be prepared at the table. This machine is a modern reproduction of a 19th-century design from Europe. It is very well made: the metalwork and glass chamber are top quality. The machine comes beautifully and securely gift-boxed. Vacuum coffee brewers produce a tasty and clean brew. The water reaches the coffee at the ideal temperature of 93c and is able to percolate for just the right amount of time. The vacuum created is very strong and literally sucks every bit of the extracted essence from the coffee grounds. For these reasons, vacuum brews work much better than french press/Bodum type coffee makers. This machine would make an ideal gift. Guaranteed best quality available.
